Pokemon Crystal - Team to Beat PKM Trainer Red?

You should teach your pokemon more physical moves. Snorlax is the hardest pokemon to beat on red's team. You need very strong physical attacks with a good accuracy. Snorlax's normal defense is its weakest stat besides speed. And your umbreon needs to learn more physical and dark moves. It's super effective against espeon. And make sure that you have a few revives if your pokemon is not 70+. I beat red with only lv. 55 pokemon. :)
